Cook/Executive Dinning Room Staff
A cook is a household staff member responsible for food preparation. The term can refer to the head of kitchen staff in a large house, or to the cook-housekeeper entailing additional household duties outside of the kitchen. The cook is responsible for the preparation of daily meals and menus, as well as menus for parties and other special occasions. They are responsible for the ordering of food, the maintenance of the kitchen and for keeping accounts with local merchants. Implements correct procedures for food receiving and storage, food handling, preparation and distribution, kitchen sanitation and safety, & equipment operation and cleaning. Requisitions and determines delivery dates of food and supplies from storage areas, to meet daily menu requirements. Maintains food inventory control systems, monitors incoming supplies for quality and quantity, notes food surpluses, insures stock rotation. A cook may provide and supervise on-the-job training and arrange for in-service and advanced training for other staff. A cook will insures that sanitation, housekeeping, and safety standards meet high quality standards.The position usually reports directly to the lady of the house or sometimes to the chief of staff, or head butler.
